The west African nation is one of the few Arab countries to have diplomatic relations with the Jewish state.
Shalom will hold talks with President Maaouiya Ould Taya and his counterpart Muhammad Vall Ould Bella in the capital Nouakchott, the Israeli Foreign Ministry said.
Mauritania, a member of the Arab League, established diplomatic relations with Israel at the level of ambassadors in October 1999, sparking the ire of opposition members in the Muslim country.
Apart from Mauritania, Egypt and Jordan are the only Arab countries to have diplomatic relations with Israel.
